This recipe is adapted from one I found years ago on a Weight Watchers forum. I don’t have the original source link, it has been over a decade. I apologize for that!
Baked Oatmeal
Dry Ingredients:
2 cups uncooked oats (preferably rolled oats)
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
Wet Ingredients (+ sugar):
1 cup milk
2 eggs
1/4 cup sugar
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1. Preheat oven to 350. Spray an 8×8″ pan with cooking spray.
2. Combine the wet ingredients. Add in the dry ingredients and mix well.
3. Pour into pan and bake at 40-45 minutes. (Note that it will look super liquidy when you put it in the oven. This is okay.)
I usually let it cool, cut it into four equal parts, wrap and put into my freezer. In the morning I will pop one out and throw in the microwave for about a minute and a half.
You can change up the spices, swap the applesauce for banana or yogurt, add dried or fresh fruit. I like this basic recipe the best, or I’ll throw in some diced up fresh apple!
